Bird; I have several, but the one I am making this week follows. I have one that is squash and tomato recipe too. Will share it another time. This one, I've had people that tell me they don't like squash, fall in love with it. Also makes a complete meal, in a serving!

Squash and Bacon Casserole

4 strips of bacon
2 packages or 5 medium fresh yellow squash
1 medium onion, chopped
1 TBS butter
2 eggs beaten
salt and pepper to taste
1/2 cup grated mild cheddar cheese

Fry bacon until crisp. Save grease. Crumble bacon and set aside. Boil squash until tender; drain. Brown onion in bacon grease. Add butter, squash eggs, salt and pepper. Cook, stirring constantly, until eggs are done. Place half of squash mixture in 2 Qt. casserole dish. Sprinkle with half of cheese and half of bacon. Add remaining squash and top with remaining cheese and bacon. Bake 350* until cheese melts. Serves 4-6.

That is as a side dish. If using as a complete meal, serves 2-3.

I was going to jump in here, but I thought I was being baited - and I was right.:D I was going to ask you what spices you used but...bacon is not a spice!

No, not a spice. Bacon is a necessity! In the words of Emeril, "Pork fat rules!"

1 medium onion, sliced in rings
1 tomato, sliced, and slices halved
2 TBS water
Butter
Place squash in 1 1/2 Qt. casserole dish. Lay onion and tomato over squash. Add water. Sprinkle with salt and pepper; dot with butter. Cover with foil and bake 325* 30-45 minutes. Serves 6.

txdon; No, I don't bait! I think that is your game. I am as straight forward as I know how to be. You should try the casserole. Bet you would love it! Can be made with frozen squash, as mentioned, but fresh is AWESOME!

Thankyou, this is one that only needs 1 slight variation but it looks good! My onions and tomatoes are ready to pick, just waiting on the squash.....may have to get frozen.

Kyle, I'll have to rule out a an illegal because my frog pad had a pointy claw hole in it.

Thanks for the recipes. I've printed them out to keep. My wife reminded me that our old neighbor used stove top stuffing and cheese in her squash casserole, but we don't remember the ratios or other ingredients.

Bird; I have one with the stuffing or bread crumbs called for, but since that is really processed food, it isn't one that I make. I'll see if I can pull it out and add it here at some time. One friend makes a casserole with Ritz crackers, and it sounds good, just haven't tried it, due to the Ritz. I'll pull it and post it too, later, with any luck at all. I have about 50 squash recipes! Gotta love it!

Western; In my book, chocolate is the 5th major food group, and important indeed. Was just looking at it from the nutrition standpoint, instead of necessity standpoint!

Whoo Hoo! We just harvested our first ear of corn in 15 years. I was going to wait one more day, then I realized that is exactly what I say every year right before the coon raid. We cooked it in a pan with a fresh picked sweet pepper - good. Whipper does get some credit also for her nightly coon chases keeping them at bay.
