I don't think you'll have an interference problem. I just finished a project with a 265' trench for a gate that has 2 power lines a control line, a phone line and a video cable. The only seperation is that power and control cables are in seperate PVC conduit, so probably only a few inches apart. I haven't had any issues at all... we did use shielded cable. Looking at the seperation charts I think where you get into trouble is non-shielded cable and higher power situations.

In case you're curious here's the llink to that project with the trench. I went wireless for the phone from the house to the garage, but will be trenching that once it's warm and I can see the ground again because the wireless isn't great.

Yes, NEC requires that you backfill with material meeting a certain spec. Basically they said bed the conduit in sand, shade it with sand and then backfill shouldn't have anything bigger than about a softball in it. I obviously had extreme rocks in my soil. I've done other projects with no sand at all and haven't had issues, so if its a smaller run or soil that isn't mostly rock without an inspector you might skip it... In my case I actually needed to bring in material to backfill due to the large volume of rock and I had no desire to someday trouble shoot 265' of pipe through the woods. The sand was relatively cheap at $18 / yard delivered.

Also NEC wants certain depths (see table 300.5 I think) and warning tape 12" above the burried conduit. The nice thing sand does too is if you're digging and you hit sand it's an immediate warning that something is there (since its not like your other soil).

For the phone cable you can use burial rated cat 5 cable, which is shielded. You only need to use 2 of the wires in it for phone service (the ring and the tip). The cool part about the cat 5 is you have extra wires, so if you need something else (another phone line, some weird phone routing) you can do that. You can ground the pairs you're not using if you want to be super cautious and that will provide a shielding effect too (I didn't bother).

Cat5/6 is twisted, not shielded, but ya - no worries.

Usually shielded is more expensive and only required in a heavy EMI enviroment, but if it works, no worries.

Did you ground the shield?

well 17 degree weather doesn't stop the job .dad and i ran the 2x1" today .spoke to the inspector again and he said sand isn't needed just keep big rock out of the refill ..as of now refill comes in the spring .

You're hard core! If you do backfill with snow be ready to relevel and compact once it melts. Did this last spring and it was a little more work but turned out ok

Did you dig this with the tractor going straight inline with the hole, or did you do it from the side a scoop length at a time?
