I don't set the feed speed by the numbers. In fact I ignore them and just watch the roller. You are right that there is a small window of adjustment but that has been my experience with other chippers as well. I just look at the roller and set it to what looks good and go from there.
The initial run in at full speed is I think about 15 min by the manual if I am remembering correctly. they have you run it in forward and reverse for a while.
I probably should flip the knives as I have about 8-10 hours on it so far, but it seems to be chipping away happily.
