Don, you where fortunate with the frost, as you know, we suffered from it Because "someone" North of me couldn't keep the door closed.
Maybe squash with a mole sauce? Mole uses Mexican chocolate.

Interesting thought! I think this will be a fun way to search out, (and create), new recipes for squash. I like working from scratch, and getting ideas, when it comes to the kitchen!

jinman; I think you are right about green beans and new potatoes being a perfect meal! I don't even need the cornbread, but wouldn't refuse it! I want mine buttered though.I am going to have to make a dip, and have the sliced squash as my chips soon!
I would think a casserole type dish with grilled chicken breast diced, squash, mole, with some asadero cheese? Or use that as a filling-start with a base of tortillas (maybe coated in mole?), then some filling, then a layer of tortillas, etc..?
Probably could work some fresh tomato in there somehow.
I don't have any moles because of the gumbo clay,, I wonder if I can use field mice in place of mole?:laughing: Lou
