Decision Made: I'm going with plywood.

Lots of great suggestions. I really like the Puck Board idea, but not easy to source. 3/4" plywood sanded on one side and painted is the way I'm going.
It will be 1/2" off the concrete floor to avoid direct contact and minimize moisture. I will also paint the plywood front, back, and all edges to seal it.

Are you going to do anything to seal the 1/2” gap? If you are insulating your walls, that’s a nice little entrance for rodents to make a home out of your insulation. They’ll find a way in eventually, but a gap like that all over is an open invitation to free room and board!

Yep. I just left a 1/4" gap and then filled it with caulk. I didn't want a crack for a welder or torch spark to get into.
