Randy I agree with you about "soft" but not mushy. I've never been an al dente guy, dislike crunchy asparagus.
I think the veggies don't get sweet enough until you cook them fairly well. Limas taste mealy and like cardboard if you don't cook them enough,
and "green"... But not much leeway to get it right, I prefer cooking them in conventional steamer.

My partner in our real estate/insurance business used to love making Fordhook lima bean sandwiches, which frankly I thought was a bit weird but
he clearly loved the beans. A little salt and pepper and butter and I'm good to go.

I will make bean or pea sandwich regardless of type and whether dried or fresh, slice of bread, beans on, fold and enjoy.

All this talk about Fordhook and lima beans, sure got me to thinking about how long it's been since I had any of such. That's just one of those things that my wife doesn't like, so we never have them. I DO like them, and like them whether they're a bit overcooked or undercooked. I'm not particular.

Squeak really, really, really wants to go outside.

She is young and fast, and we are old and slow ... plus she does not necessarily always respond to voice commands.

And there are hawks around. She would make a tasty snack.
How do you think this would work for Squeak? I was thinking of it for Gray2 but the neighbors like him and he usually comes when we call. I left the garage door open a crack (accidentally) when we put him in it last night he escaped, we realized it this morning when he set off the motion detector Ring doorbell. This was the first night he was free to roam the neighborhood.

All this talk about Fordhook and lima beans, sure got me to thinking about how long it's been since I had any of such. That's just one of those things that my wife doesn't like, so we never have them. I DO like them, and like them whether they're a bit overcooked or undercooked. I'm not particular.

I use to avoid stuff my wife didn’t like, then I started just putting it on the table if I was cooking, which is most of the time, and now she eats pinto beans, limas, BLT pizza, etc... And I eat stuff I thought I didn’t like too, good learning experience.

Fordhook (never hear of them either), in the South they are called butterbeans or lima beans (large and small). And yes there is a good Instant Pot recipe for "Butterbean Soup", with 1 bag (16oz) of large lima beans, carrots, celery, onions, bay leaves poultry seasoning oregano, Italian seasoning, pepper, cloves and allspice - 30 minutes in the IP.

Exact opposite for us; Wife loves them, and I can't stand them. My mother loved them, but I never developed a taste for them. The Wife was lamenting not long ago that she misses her grandmother's beans. When I asked her why she doesn't cook them, she said it's because I don't like them. How silly is that? I told her she doesn't have to give up things she likes just because I'm not a fan. She doesn't like spicy hot food, but that doesn't stop me from eating it.

I’m from the south (NC) and they’re called Fordhooks there, or green butter beans also Virginia and Alabama that I know of. They are also just called butter beans, but in the Deep South butter bean usually refers to large dried Limas and small dried limas are called baby butter beans. All depends on where in the south you are. Recipe looks good.

I spoke with a couple of young ladies who came by at work this morning to let us know that their brother, one of our forklift drivers, was murdered Saturday night. That's a tough conversation to have, I can tell you. His wife came in later and talked to the owner of the company. When he told her of the life insurance policy, she broke down and cried, saying, "He's still looking after me even after he's gone."

Looked up the story on one of the local news websites, and apparently the shooter turned himself in at the crime scene.

He was a good guy, just living in a bad neighborhood. I'm going to actually miss him.

Only people in North Carolina . . . . :no: we don't think people from South Carolina are from the South. Oklahoma is pushing it. We are not talking confederate lines we are taking about states that one border is the Gulf of Mexico.
