I'm wanting to add a machine shed lean-to on the back of my building. Do they made some kind of trim that will run up the wall of the building above the shed roof that will keep water from running down the wall and between it and the roof of the machine shed?

Steel building?
If so, you will need to cut a nice straight line in the existing steel wall, and slide flashing up under the steel..
Flashing should go up under the existing steel at the cut by at least 8".
Use a high quality silicone sealer as well

To answer your question, yes, they make a flashing called end wall flashing for metal roof. As fried said above, if you aren't going to the eaves you will need to cut the siding. You could always have some custom flashing made.
