Today we should have all the kids here for an early supper, I have a ribeye roast in the oven at 210 for a slow cook to finish with a reverse sear at 575. Rubbed it with salt, pepper and olive oil and let it stand for a few hours before putting it in the oven.
Planning on steaming some broccoli and and some mashed potatoes for sides.
The talk of Potato cannons and Ben bag launchers had me go look in the shed, where I found these. They work as advertised.

For todays roast, I instrumented the oven with outboard thermometers to measure both oven and meat temps. The oven has its own meat probe, which I am using as well, but now I can check it for accuracy. I replaced the Range a couple years ago, this one seems to do much better at controlling the heat. The old one would make a sawtooth graph as it dropped below the set point and then heated up past the set point.
This one seems to plot a smooth line without the saw tooth pattern. It’s own temp probe is within a degree of my reference probe. The oven’s actual temp is about 12 degrees over the set temp, but doesn’t vary more than a degree or two.
