Rest in Peace
Sweet potatoes different in different parts of the country, I think, or maybe it's just different people.

That's what my Oklahoman mother always made. My wife's West Virginia family had sweet potatoes quite often, year round, simply peeled them, then cut them in half and baked them with a little butter and sugar and served as a dessert to the meal. And now . . . my wife and I both like sweet potatoes, but about the only way we fix them is baked, then peeling removed, and mashed up with butter as a vegetable with a meal instead of a dessert. And of course sweet potato pie is so close to pumpkin pie that I don't care which I have. Most of the ones at Thanksgiving are sweetened too much with brown sugar and butter and usually with a layer of toasted marshmallows on top.
