I have a CAT 297C skid steer with typical 8 pin connector.

I recently purchased a Front blade (basically a 6 way blade with wheels) and it has a pin connector with a pattern of which I am not familiar.

The question I have is can I pull the current attachment plug apart, and move the connector pins to correspond with the Cat 8 pin pattern? (obviously I need to know what pattern this is and what functions the current pins/locations have.)

Short answer: yes.

Long answer: there's often a special extraction tool required, to remove the contacts from the connector shell, for rearrangement.

You've probably seen how these are assembled, contacts crimped onto wires and then slid into the shell. Each contact has a barb on it, fish-hook principle, once slid home they don't want to release. The extraction tool is usually a thin rolled tube, slid in from the front, that depresses this barb, so that the contact can be withdrawn from the rear.

Here's one example, which you can purchase from Grainger for $8 or Amazon for less. You just need to figure out the size for your connector:

There are other concerns, compatible voltages and currents, but I'm assuming you've already checked those boxes.

Those look like aerospace Cannon Plug connectors. I don't think the simple tool above is going to work.
Google ITT Cannon and you should find what you need.
Maybe it's just a 'special' simple tool.
