I would question a few things that they told you.
1 - On that tractor you SHOULD NOT be using a PTO pump. The woods pump puts out 6 gals per minute, the tractor puts out 6.4. Your paying about $600 for less flow and a slower backhoe. The alternitive is a power beyond hookup, any knowledgeable dealer should be using it, it costs about $150 in parts, there is no kit to do it.
2 - Differences between the kubota and woods hoes is purly the mount. With the Kubota the mower linkage can remain on the tractor, the woods it must be removed. Its not difficult, but it is time consuming and you do have to lie on the ground to get at some of the linkage pins. None the less if you don't plan on mowing the woods is much more secure mount.
3 - The 7500 will do fine on that tractor, I have sold several like that. The reason for being no price difference is probably because they have one in stock that was bought before steel surcharges and price increases.
4 - If purchacing a new backhoe, I would never get a 3pt mount. The cost difference is about $500 to use a subframe, without it you run a serious risk of splitting the tractor in half. I disagree that its heavy enough for a 3pt mount. It will work, but I'd hate to see several thousand dollers of damange done if the tractor does split. A 3pt mount also giggles more than a sub frame.
You did not post where you are from. I live in south central PA and am a salesmen for Messick's between Lancaster and Harrisburg. If you have any other questions about your machine on the reputation of the dealer that your working with let me know. For the most part dealers in our area are very straight forward, given some of what you where told I have some suspecisions that it might be one of the bad apples.
