Some foods are meant for garlic, I have discovered. Rarely, if ever, have I ever added too much. Here are some examples:

1. All cuts of pork...especially when it goes on the BBQ or smoker/
2. Guacamole...garlic makes it. Try the RoTel guacamole recipe with garlic.
3. Corn on the cob; great with garlic salt or garlic butter.
4. Grilled shrimp...in a grill pan lined with foil; with garlic and butter
5. Grilled Asparagus...same as shrimp.
6. My home made BBQ rub contains garlic; goes with everything!

I disagree with the guacamole comment a little is necessary but too much renders it un-edible. My buddy fresh out of high school decided to make a small bowl of guacamole for a party. recipe called for a clove of garlic and, not knowing what was a clove, he put the whole bud in the guac. we couldn't eat it and that is saying a lot from some starving college students.

About 50 years ago, a bar owner sold the best tasting conies I have ever eaten. But his wife took the recipe to her grave....until about 15 years ago. My buddy and the owner were alone in the bar one night in the early 70's and he gave up the recipe, just one drunk to another kind of thing. The recipe makes about a gallon of coney sauce with LOTS of onion, ground meat and spices.

Question.... Does 4 heads of garlic sound about right for an Italian recipe? A fresh head garlic in our store is slightly smaller than a tennis ball.

I have made it twice but never put 4 heads in, just 2. I would hate to put to much in and ruin it because it is not a cheap thing to make. With buns, pickles and dogs it is over $50.
Four heads sounds a bit much for a gallon...but since you have made it using two, you should have an idea what 4 heads would do. Do you cook the mix? If so, that might tame the garlic down a little bit. If 2 heads were not too much, maybe go with 3 next time? Special recipes, like my BBQ rubb, are fun to play with...it has changed many times over the years.

If so, that might tame the garlic down a little bit. If 2 heads were not too much, maybe go with 3 next time? Special recipes, like my BBQ rubb, are fun to play with...it has changed many times over the years.
The garlic gets pressed through a garlic press and put into the pan with the onions and cooked until the onions are translucent.

what is a "coney" or using your other spelling "Conie"? I searched and found nothing
Coney is singular, coneys or conies is plural.
A coney is a hotdog in a bun with a sauce similar to chili spread on top and covered with diced onions, yellow mustard and a pickle spear.

But the sauce is more than just grandma's chili recipe.
There are very few, if any beans in it.
It's all meat, onions and an assortment of things to make it spicy hot.
