Most "gluten intolerance" in this country is in the minds of the intolerant. There is very little evidence that true intolerance eg Celiac Disease is on the rise. Gluten "intolerance" is yet another fantasy of the WWW along with candida intolerance, chronic EBV infection, etc etc.

As for linking gluten intolerance to white bread consumption, white bread consumption has been falling as gluten intolerance has become more popular. The 1950's and 60's were the white bread decades. Gluten intolerance was not even heard of other than in Celiac Disease in that era. Gluten intolerance didn't become trendy until about the 2000's so it is pretty unlikely to be related to white bread consumption.

I agree that what people refer to as gluten intolerence is most often times a bunch of bunk, but I also still believe that the drawbacks of "fast" bread (or even "fast" or processed food in general) have something to do with digestive issues that people are often times tagging as an intolerance to specific foods.

Like I said, it is my opinion only.

My wife and I found this book very interesting. It had good insight on some of the health issues fro fast food/processed food in Western Society too.

We talk of gluten intolerance, but I wonder if we are not really talking about "Roundup (glysophate) Intolerance" from the residue that accumulates from the countless sources, gmo etc related! Go organic!

I like that idea of a forum for those of us interested in cooking too. I wouldn't worry about copyright issues though. Virtually all recipes everywhere are hand me downs or stolen from other cooks anyways. Can you imagine trying to copyright the recipe for pancakes or ragu sauce?

Copyright is not my area, but I believe that you cannot copyright ingredients. It may be that copying the the language of the presentation word for word, comments, pictures, etc. are areas to avoid.

I think it is a great idea.

OP here....I would really, really enjoy having a food and cooking forum. But as far as copyright issues...I don't think that would be an issue UNLESS the recipe directly attributed a source. A number of the ones I have posted elsewhere are a b*******d version of something I find in a printed book or magazine or from an online source.

And, IslandTractor...I have a good friend, a woman in her middle 50's who has a MAJOR gluten intolerance and it's not something she is imagining. Weird thing is, she has two sisters and a brother but none of them suffer from the same thing. I respectfully disagree with your suggestion about gluten intolerance being a fantasy.

We have talked about cooking forums in the past. But the TBN crew has had other things they were working on.

There is a cooking forum on TBN's sister site "CountrybyNet". But it is not a high traffic site like this.
