One last update:
I sold the tractor a few weeks back. The new owner was a lot like me, a regular guy, a dad, a husband.... I wanted to make sure that I was wasn't passing the buck like the previous owners did to me. I took many steps to ensure it wasn't a patched up pile so I ended up taking around a $4,000 loss when I finally sold it.
I wrapped the head gasket job up in the spring of 2023 and lent it out. I gave the instructions to keep an eye on the temp gauge and if got hot to idle it or shut it down. He used the machine for around 100 hours that summer and told me it was keeping up and in temp. I brought it home and was able to see that while the temp gauge was showing hot, the engine was not. I replaced the cluster and if finally was reading the correct temperature.
