Any reason why someone couldn't add two chains to an American style bushhog? Two blades, plus two chains, each 90 degrees off from each other.

Both might be a bit too much for the tractor. I would use either two chains or two blades but not both. You guess already use what we would consider "over sized mowers" for your tractors, chains do eat a lot more HP, very noticeable difference.

I'm a little concerned on how the gearbox will handle it, as I've seen several threads with broken spindles. It will probably handle just fine and yes, it would be very easy to add two chains. We use grade 80 chains. 3/8" chains for mowers up to 3.5 ft, 1/2" chain for 4 ft up to 6 ft, and the bigger boys will use 3/4" and bigger.
