My BIL's, brother's wife, whew, made Kimchi. She used a family recipe, it was hot, smelly and YUMMY. Open the jar and if would fizz a bit. After the first time i trying it and professing my love for the concoction, she made sure i got a few jars as well, when they visited my BIL. I haven't had home made in years now.

Mine is more temperate but not something I can eat on its own.

All the kimchi I have had has had the fizz when you pop the top.

One of my Christmas gifts today was a fermentation crock kit made by Ohio Stoneware. My wife ordered this through Ace Hardware and picked it up at our local store. It’s a 2 gallon crock with lid, and a 2 piece stone weight. The quality is excellent, and the company is close by in the historical stoneware capital of Zanesville Ohio. I’m not sure if this will get used for kraut next year, or if I’ll try some pickles or jalapeno peppers.

Oh man !!!! I am jealous !! I tried to order an Ohio and kept getting out of stock messages when I last bought a crock. I think I was after the smaller version, but I would have taken a 2 gallon.

What a Crock! :laughing: :laughing:

Nice. I have 15 quarts to process and taste Sunday that will be at the 6 week mark. Cannot wait.

I processed the last of my 2020 kraut 9 quarts of Kimchi, 3 of Curry and 1 each of Jalepeno/Cilantro and Juniper/Caraway.

Looks nice . . . but Duck no fizzing when you open it, right?

Nope, no fizzing whatsoever. In fact, here is a picture of one of the stones that sit on top of the kraut coming out. The brine was a beautiful burgundy color and I was trying to get a picture of it. The picture of the brine color did not work but you can see there are no bubbles. I am not sure I have the stones to eat a kimchi that fizzes.

There was absolutely no scum on top, which I get a little of with some recipes.

Looks good duck . . . I had some in SEA years ago that fizzed when stirred after digging it up. Strong . . .

Not 'scum, the proper name is 'Kalm' and it's the mold growth where oxygen contacts the fermenting Kraut juice. If you didn't have any, you didn't have enough oxygen present in the crock to grow any.

Wife made Rueben sandwiches this evening with home cooked and sliced corn beef on dark rye with swiss and some of our red kraut. Tremendous. I ate 4 and I'll pay for it tomorrow after my morning coffee....:D

Home made coned beef, now there is something that I have been meaning to make. Sounds good! I also love a good rueben. :licking:

Just like to mention be real careful for at least 24 hours. Wife ain't gonna be one bit happy you go shartin de bed. Wimmen tend ta get very nasty you holler headin fer de shower dey need to wake up and change de bed. Just sayin.

My Kraut does not give me the sharts. Makes the plumbing work smoothly :confused2:

But then I do not eat 4 Ruebens at one sitting, so what do I know.
