You should check out a real Butcher Shop maybe. I always enjoyed the 10# rolls of Bologna and that is the only place they can be found now.

Like you, I haven't seen them in stores in years, but my brother tells me he buys them 2 at a time from a store in Waco, TX, but I don't remember the name of the store.

When I was in college I bought a beef heart and cooked it. The other housemates were appalled when the smell permeated the whole place. I had to eat it myself for some reason.

Did you boil it? My Mom always fried it...and I suspect (It's been 70 year or so) that she soaked it overnight in either salt water or milk, and I don't recall any odor. Sharn Jean soaks liver and fish in milk and it helps the taste and smell quite a bit. "Fresh" fish are a rarity here, so it's almost a necessity.
