I don't have liver much any more; my two sources are gone.
- Grandma used to make it, but that was yeas since she passed.
- There was an awesome local restaurant where I grew up; they made the best. Liver and onions with brown gravy and bacon... They had a campfire pit in the restaurant; a cold afternoon by the fire eating Liver and onions... Great memories. Or, breakfast by the fire on a cold morning, Denver omelet... Unfortunately the owner/proprietor passed away years ago and restaurant is long gone

First, fry a pound of bacon. Set the bacon aside.

Second, slice up some onions and spread them around in the bacon grease to cook.

Third, after the onions have been sauteing in the bacon grease for about 5 minutes, lay in thin slices of liver that have been dipped in flour.

Cook on one side for about 3-4 minutes, or until you see the blood coming up through the flour.

Turn the liver over and cook another 3-4 minutes, just until done. The main problem with bad liver is overcooking.

Serve the liver, onions, bacon, and a side of ketchup to dip it in.

Check you blood pressure and cholesterol throughout the evening and head to the emergency room if needed.

Enjoy!

Still my favorite recipe...
Forgot to mention add salt and pepper to the flour mixture before running the liver through it. :licking:

My wife wants nothing to do with the liver, so I haven't fixed it at home in a long time. However, my 88 year old next door neighbor and I like liver and onions, and we know of a good local restaurant that has that on the menu one day a week (Thursdays) so we go there, and my wife has a chicken fried steak while he and I have our liver and onions.:D

Nothing beats liver and onions IF someone else prepares it. I cant stand the smell of it cooking, but love the after cooked taste. Every time I get a chance to go to a Luby's or other buffet style restaurant that serves it, that is what I order.

How well I understand that. As a little kid, I liked liver, and I was less than 10 years old when my mother went into the hospital for an emergency appendectomy. I was the oldest of 5 children. Anyway, I had to cook supper for us that night and I fried calf's liver. It smelled so bad cooking that I wouldn't eat liver for many years. I first thought maybe something was wrong with what I cooked, but the rest of the family liked it just fine.

The best side dish with liver and onions is white bread and butter IMO...!

Growing up mom fried it with onions but I was about the only kid that would eat it. I gorged myself and loved the taste. Some nice mince meat for desert and I was all set.

Doctor says I cannot have it now :hissyfit:   :hissyfit:

Wow! Fruitcake too? My Mom always had a fruitcake cookin' under her bed. I only get the Collin Street Bakery Fruitcakes these days. Not booze soaked but do in a pinch. CHEERS!

When I was in Nam and the mess hall had liver and onions I would load up a plate with just that. Man I love liver. Anyway, my wife hates it so we don't have it here at the house but sometimes when out dining if it's on the menu I order it. Umm good. Bob

I don't tend to eat any organ that was used as a "filter" for vertebrates. My grandmother used to relish "kidney meat". I mean you could smell the urea as she plopped these things down on the cutting board.. I'd say , "Norny, how can you eat something that smells like pee-pee?" and she'd say" it all gets burnt away." To me, it was still like eating "plutonium".

As the owner and practitioner of "Lou's Garage of Medicine," tell your doc he's misinformed.

I hated fresh liver and onions as a kid. I still hate it. My wife waits until I am out of the house to cook it - then eats it herself.
No accounting for taste! :D
