It truly taste good. I do not look at it as "Healthy Eating" I look at it as not eating unhealthy. As you change food your taste also change, it takes a few weeks that's why most take a sample and don't like it and never eat it again. My nephew has limited his tastebuds to chicken nuggets, chips and cookies (salt/fat/sugar). Everything else just taste nasty to him.

The class consist of many 4 - 7 minute videos.
You are graded on the cooking assignments you photograph and send in. Photos consist of different stages of cooking and describing the what and whys. Grading is tough and individualize with a lot of feedback.
The videos are available up to a month after the class ends in December.

i did not realize there is a correct way to cut each vegetable and all cuts are graded on consistent sizes. I had to buy a new Chef's knife after seeing how to pick out a good knife video, and cutting is much easier now and I am flying when cutting . . . and bleeding just a little . . .:eek:

Sseeloff, :laughing: Actually now I know what I'm eating because now I add all the ingredients instead of trying to pronounce some of the labeled ingredients.:D

For those wondering what the Forks Over Knifes is, it does not mean no knife to eat meat, it means eating to stay away from the surgical knife.

I looked at the website. Looks interesting. I would not have any issues with such routine/food style. I already have a garden so I can pick and consume most of my meals and avoid the processed foods. Nothing better than picking your own lettuce, tomato and broccoli, and adding a little olive oil and lemon juice. Do that from fall to spring on a near daily basis. Love to experiment with outher vegetables, like eggplant, zukes (make zoodles, tossed with garlic, olive oil, tomato and basil), you get the idea.

Getting SWMBO onboard is an entirely different matter. She's a meat and potatoes person.

Turnips are a Fall and Winter staple here in the south. My planned greenhouse is going to take up some of the current green patch, so I planted another one yesterday. Meanwhile we are eating the ones inside the strings as fast as we can. Don't want to see them wasted.

I'm lucky in that respect, my wife had been vegetarian for many years so when it came to the Super Heart Healthy Cooking she was already half way there, of course after my ambulance ride I needed no encouragement to bump me up to, and past her to the top tier (no animal products or oil) she gladly tagged along or did she lead the way, I forget now. My last heart PET scan made her smile big time.

Looks great. I haven't had turnip greens. I am getting used to kale, it took a few tries !

I have to have a little balsamic vinegar with kale. Arugula is even healthier but also more bitter (yuck). In the cooking class they actually made it tasty with white balsamic vinegar and (drumroll) fennel. I don't like any of the three ingredients by themselves but together they ???? kind of cancel the bad tasting parts out.

Mist is really dense this morning, there is no sign of the sun and it is as wet as walking in the rain. Dog looked at me with a "this is nuts, lets turn back" expression and I agreed with him, we will go around the sheep after breakfast.

I always thought "Bobcat" was a machinery manufacturer, so when RNG told us that, as he was typing, a Bobcat was walking across his patio and then taking a seat, I thought for a split second he had been lubricating his imagination with a few too many beers, though I also saw a surreal picture of a skid steer parked up and admiring the view of the canyon. By the end of the paragraph I realised my ignorance and now get why Bobcat have a picture of a lynx on everything.:duh:


Today I hope to get a couple more gates in. I have cut some 8' lengths of electricity poles for the hanging posts and these take me a while to dig in. A nice steady job that gives plenty of time to watch the wildlife and listen to the birds. Maybe I will catch a glimpse of a Lesser Spotted JCB ...;)

A cool 37 right now...still damp from the rain we had, so that 37 feels clammy. I have a flannel shirt and sweat pants on right now. High will be 58 today.

No projects going on this weekend...hope to find a winter home for the backhoe and maybe mow the lawn...that's it.

I should not be up this early...but my after work nap was extended to most of the night (up at 0315)

Actually Bobcats are a separate species from the Canadian Lynx. Vermont has a stable population of bobcats.

The temperature cooled off all day yesterday to the point it was down right cold to me a rain cooled 49 when I got home from work. Had three inches in rain gauge last night but think we dodged a bullet for this storm. Rain today heavy this morning tapering off to showers later. May try to change oil in tractor

If wind dies down I need to pick up a lot of tree limbs that have broken off trees in yard. Going to be a good day to finish my TV antenna project. Have to move furniture to get at box mounting locations.

4.26 inches of rain from this system so far, a little more today but that's quite a system, I assume from the hurricane, that is headed right up through Charleston (that town is going to be damaged from this) and up into the interior of the Carolinas, not the coast. So the amount of rain still coming this weekend is unknown. We've had 6.5 inches so far in the last week, sure hope it's not much more coming. But thankfully, no flooding downpours. Of course, I have not looked out this morning to see if the turtles had floated away in the night but unlikely.

Not sure of the agenda today, my guests may go home today or stay another day.
We had a wonderful trip on a very rainy day yesterday to a commercial dock/fishery at Swans Quarter, about half way East to the Outer Banks. I found the docks by looking for the tall masts of the shrimp trawlers, and easy to find in a small town. Shrimp was caught yesterday morning, we saw it coming off the boats, then into the pot that night but gosh that was good. Had some for shrimp cocktail and some I cooked in butter and wine over pasta. All I needed was a Bubba's Shrimp hat...

and when we got home lo and behold, on Terrapin Track Road there was a turtle in my driveway. Nice little box turtle, let me pick him/her up and out of the way.
SNAP. Oh boy, no box turtle this one, neck shot out and went for my finger in lightning speed. Ah, you are a little snapping turtle, not a box turtle. Several attempts to get him picked up were clearly dangerous so he got moved with a shovel.

64 going to 76. I know everyone is laughing, but that is cold around here. :thumbsup: Hope to get lots done on the run in, will have the wifes help holding boards. She is helping me today, and I have to help her tomorrow. Hmmmm, guess I will be scrubbing toilets :laughing: Her brother and his wife will be coming for a visit next week so we have to get the guest room ready and she is wanting to roast peppers and can salsa.

Drew, how are you holding out with the weather? I hope none of the turtles swam away this time, and the trees are standing strong. The pecan trees are losing their leaves around here.

Don, you forgot to mention that you feel better, have more energy, and look younger by eating the way you do... now if I could just give up the awesome fruit pies my wife makes I might be able to lose weight. :licking:

When it flooded so much here in Texas back in the spring, I saw more than a few snapping turtles on the roads. My wife and kids took a pic of one nearly a foot long on our driveway.

Those shrimp look big and tasty! What a treat. Do they measure them by size to sell them? Here, they size them such as 21-25's, meaning 21 to 25 per pound. I like the bigger ones. Fresh caught. Those they are peeling look BIG.

Our high school football team is 5-0 beating another team having a down year. We are good, but the defense could use some more snaps and get some key players healthy.

48 this morning and headed to 56 today. 50% chance of rain today had .08 inches yesterday. A couple very cool days.

Fairly good day yesterday. Got the disc all greased and started discing. Got about half the field disced then had a brush pile in my way. I'm tired of going around it, so I go get dozer. Move brush pile. Look up and see a tree lodged over in another tree from a storm this summer. Go dig it out and push it down. By this time it's raining. So no more discing. So I started cleaning with the dozer. Built a ditch crossing, smoothed some washouts and move some more trees.

So today I'll be back at it. Need to take chainsaw with me today to cut off root balls as I'm going to use some of what I'm cleaning up as firewood. At least a half a day. Have a family reunion at 4. Yearly fish fry. Should all be Florida fish too. Mainly Crappie.
