Good afternoon all. Made it back to MO yesterday evening with no problems. 29F this morning, 27F now with snow in the forecast. The heavier snow will be south of me by about 70 miles (4-7 in vs <1 in for me). Unpacking from trip and catching up work on agenda today.

What Larro didn't tell you was he called me at work yesterday and offered to wash some of my shirts while he was washing his. I told him I had a couple of new (store bought) shirts and I didn't want him to wash mine just in case the color bled. I sure am glad I declined his offer. I actually am wearing a new blue shirt today that I washed. Not sure what he's wearing (afraid to ask) I left this morning about 6:00 am and he was still in bed.;)

Larro worked his ham juju on me so I bought a spiral cut shank ham yesterday and baked it good last night. Taste tested it too. :) Trimmed off the bone this morning and now the crock pot is full of split pea & ham soup. :licking: Saved some ham slices for eating and froze the rest.


Dave, we had never cooked a spiral ham until two or three weeks ago. Mamma wanted one, but she couldn't use the whole thing, so we took half of it. We found out we liked it, so we did one for Thanksgiving. And we did put the bone with a goodly amount of meat still on it in the freezer for beans. But I always get a huge ham for Christmas from my work, so we will need to be checking to make sure all of last year's ham is used. We have it cut into three roasts, then about a quarter of it sliced in steaks to cook for breakfast and the rest into ham hocks to go in New Year's blackeyed peas. {I have never been crazy about jowls, on hogs or anyone else}

I was so happy to get all the blue out of my yellow Duke brand shirt, that I wore it to work. I won't mention being in a hurry when I dressed for work, and forgetting my belt. Luckily I found one at ALCO's that fit me, and was on clearance. People might start thinking I don't have good sense.

The spiral cut ham looked to be the best choice of what they had. They are not always my favorite. I had one that didn't taste good at all. I'm pretty sure spiral cut or not from the store is a poor excuse compared to a home cured and smoked ham. :)

Sharon would probably shoot me if I started building a hog pen, of course I'd need a cook shed like you to process it in too. :laughing: But I think that is the best way to get good pork. The first ham would only cost about $1000/lb.

You guys are making me hungry. And I already had a great dinner, but the dessert, by a friend of ours, was amazing, a french apple pie, it's really like a moist apple cake, with real whipped cream........ Yeah, baby!!!!!

We did have a smoke house when I was a kid. I had to fire it before and after school when we had meat hanging. It was a lot of work, but I remember the hams being very good. Now if I ever do any sausage, I will be using a more modern grinder than we had back then. I collect old meat grinders, but I sure don't want to have push an entire hog through one. Sister and BIL have done some deer/hog sausage with a very nice grinder they borrowed from from her boss. With the right tools it wouldn't be too bad.

And my cook shed is still in the dream stage. We have to wait at least until next November because the Longleaf pines out our back door are on a federal conservation program until then. And I raised enough hogs when I was younger that I think I would by one from one of my real farmer neighbors ready to butcher. Hogs are too smart for your own good. The pine trees pretty much stay where you put them, and never break out just as you are leaving to go to town.

Have tried a variety of spiral cut hams over the years - they do vary depending on source. Never had a bad on from Costco. Of course, I can't leave well enough alone, always tinker with it, never had one just as is. The last two years wife made a rum glaze for a cake and there would be some left over, this year, I poured in on the ham the night before. We always arrange sliced pineapple, cherries, and cloves on top. This year I made the packaged glaze with the pineapple juice. May have been one of my best if I give credence to comments I heard.

I really like the leftover aspect. So easy to package in various sizes with the Foodsaver and freeze. Of course the bone makes it into a soup before the dogs get it.
