I clean 'em and leave them whole with the heads on. Then I heat up about 1/2 stick of butter in a cast iron pan and sprinkle the pan with salt (keeps it from sticking). I slice up a lemon and put lemon slices, pepper and minced garlic inside the fish and cook slowly - 10 minutes per side till golden. I add a bit of white wine to the pan near the end and serve with lemon slices.

The cheeks are the "tenderloins" on a fish.

Well Harv, I've got plenty of fish in the pond and plenty of room - soon to be more. My daughter and son-in-law plan to move back to the area so we're planning to build another house on the property in the spring - that's almost too darn close to live near your kids./w3tcompact/icons/crazy.gif

Well as we are thawing out from the ice storm I headed to the trout stream again.Kinda erie,everything coated with ice except the river .Got my limit buy 10a.m.and headed to the truck ,never seen another human on the river today.Got home about 12.30 lunch time!The wife rolled em in flour and cornmeal and deep fried em.Holy cow,heavens-ta-mergatroid even! Way good fer sure.The son and nephew are in S. Carolina at Ft. Jackson for A.I.T., been trying ta wait for em ta get home for Christmas leave and share the bounty but that was before I et some of these great tasting little fish!I can hear It now,dang pop you puttin on a little weight?Thanks again for the cookin leasons guys,I am gonna try the other ways ta cook em too when the fellas get home.

That does sound delicious, Kerr. Fresh fish that's never been frozen is sure hard to beat.
