it looks complex and there seems to be a lot of overkill...but anyone that knows how to read a (real) framing square should be able to cut (from theory) all those members (lengths and angles) on the ground and toss them up...if the pitch is true...
True, but the problem comes from working in real world - the beam is not straight, tolerances add up to create some real troubles, etc. Very easy - at least for me- to build it in my mind, or on paper, but to make it solid there are other factors I don't take in account every time

That's very likely, I tried to find info on how old the roof is, but there were no referrals to age on the internet. That means it could be hundreds years old - mortise all the way.
