I have a 10 year old fridge I'm going to be using to brew beer. I need to maintain a temperature of about 68 F degrees for fermentation, so have it wired to an external thermostat that kills the power to the fridge when it gets to the correct temp (the fridge is plugged into the thermostat and it essentially "unplugs" the fridge when the temp is right and "plugs" it back in to run the compressor when needed).
My problem is the fridges original thermostat control is not working and I don't want to buy a replacement as I don't really need it. I removed the control and bypassed the control by wiring the two wires together directly so the compressor runs constantly (when not controlled by the external thermostat switch). My concern is how safe is it to bypass the fridges internal control like this- is there risk the wire will overheat or something? I just don't know enough about it, the set up otherwise works perfectly for my application.

I would have done the same and not thought twice about it.

No worries.

As the owner of a refrigeration service company for 38 years I can say that there is no problem connecting the wires as you state providing that you have the connection well insulated. :)

Thanks for the info- I figured it was similar to bypassing a switch, but if I burn the place down my wife will be a bit annoyed.

Always keep brewing. Any electrical fire would release the brew (also known as abusing alcohol) and trip the breaker, no more spark, less chance of a fire. If too much brew is warehoused, call me i have friends and we can help!!
