Yeah, not a big fan of that myself.

My daughter cuts up squash (baking pumpkin or red kabocha) into quarters, scoops the seeds out, and then roasts it in the oven until it's soft (and somewhat singed). Often adds a carrot or yam, also roasted, and makes the pies from there.

My wife makes squash pies too, though she just cubes it (well, I cut and peel) then steams and mashes it. We generally have so many squash in a given year that we run out of things to do with them. Squash is less watery than pumpkin, but still works great for pie...seems to have a stronger taste too.

Not even sure what kind of squash it is...about 10 years ago my sister gave us a couple, we really liked it so we saved the seeds and just plant that variety each year.

We don't have Costco around here but I agree, sometimes it's less hassle to just buy a "store" pie. They're usually pretty good and a lot less work.

Best pumpkin pies I've ever had, roasting reduces the water content so you've got a true custard to the pies and they're not "juicy" like most are.

Sounds like a winner. To be honest I have never had a home made pumpkin pie I care for. They usually are too runny, really bland on spices or over spiced. I like a store bought pumpkin from Walmart or Kroger, I haven’t bought one but there is a store bought pumpkin that’s nasty, I know GFS (Gordon food service) is one supplier of a bad pumpkin pie. Place I work for has a cafeteria, they are supplied by GFS and never have a good pumpkin. They do have a really good pecan and coconut cream pie.

I think most home made pies I have had was from canned pumpkin pie filling, never from actual vegetables.

For pie I prefer cool whip over ready whip, for shakes and iced beverages, ready whip. Can’t say I have had home made whipped cream either.

Around here we got grape pies, good once you get used to idea of grapes in pie. Lot of dem get sold during grape festival. Man can get tired of grape dere, get outhouse ailment eating too many grapes too.

I am a spoiled man thanks to baby sister who owned 2 bakerys before she decided she needed to be retired woman cause she had enough money to retire. Her daughters now run and own 3 bakerys but dey gotta send daily samples to momma for what called quality check. Since I ain't home nephew is hauling (removed)'s locked and sealed piecrate up from baby sister. He right now in Ohio, cause he forgot to route exhaust from pie crate out window of doghouse and got tired.

Meanwhile (removed) makin do on de punkin part in my pie deprived world wid deep fried pie punkin slices, IF (removed) can keep enough girls back from draining rack to get slice fer (removed). Poor little girls led a deprived life till dey met me. Took most of 9 hours to teach slicin and proper dredging..

Tomorrow regardless what government goons think bunch of us getting together over at Phil's bar/museum/hotel where big fryer is set up on de porch. I lookin forward to tater pancakes and homemade kraut along wid more fryed punkin and pies. Probably be too many middle bender tractors blockin parkin area for goverment agents to get in.

He sounds like me; never met a pie I didn't like. Daughter said she decided to try another new recipe and made a pumpkin cheese cake this year, and it was very good.

I decided to have peach pie this year but my all time favorite pie is apricot especially when it is an authentic fried pie. Hostess made a big mistake when they switched from fried to baked hand pies.
