I make pastrami from turkey. I read somewhere that the original was Goose. But in the States they used Beef because it was plentiful.
Don't quote me I ain't no historian.
Anyway I wanted to make it less dry than breast meat so I wanted to use thigh.
The problem was thighs are not big enough and I don't live close enough to Three Mile Island to raise radiation mutant monster turkeys.
So what to do?
Solution?
Moo Glue. It's made to glue cows together so a Dairy farmer can get better milk production. Or maybe not.
It's an enzyme that when sprinkles on meat causes a temporary breakdown of the surfaces so that when the pieces are brought together they literally bond as if they were one and when cooked the enzyme breaks down into harmless molecules and you are left with a continuous hunk of meat.
It's how lunchmeats are made.
The package I get from Amazon can treat 12-15 lbs
It can be sprinkled on dry as a powder. It can be mixed into a slurry with 4 parts water. It can also be added directly into ground meat mixtures. It is safe and easy to use.
