I picked up a new CS-352 the other day, same weight as the CS-310 but a few more cc's. How long do Echo's take to break in? Seems like it doesn't want to rev out very far. Carb adjustment/spark arrestor removal needed?

Any 2cycle engine equipment's break in should be used a couple times gently.
It is good enough in my experience.
I don't think you really need to remove carb adjustment/spark arrestor at this time. It is new.
Maybe in the future when it is needed.
