I went to college at Utah State Univ in Logan, Utah just south of the border from Pocatello. I'd suggest after your business trip to Lewiston is finished, take the long route back to Boise through the central Sawtooth range. Take St.Rt. 12 east to just south of Missoula, Montana (stop here in Missoula....it's quite an interesting small city), then south through the Bitterroots on St.Rt. 93 through Salmon, Challis, and then Sun Valley/Ketchum. This is beautiful Sawtooth country...think you and your wife will enjoy it. If you have even more time, continue further east and visit Yellowstone and the Grand Tetons. You'll see vistas that you'll never forget.
