Good evening all. 38F this morning, clear sky, brisk wind. Cold front came through early this morning, TV weather report gusts up to 45 mph. During the day, the wind slowed down, sky stayed clear, and high temp was 57F. Could not get organized this morning, so nothing got done. Did get a bike ride this afternoon, calf was ok through most of the ride, started "grumbling" near the end. Got the dog back this morning, got him walked this evening :)

I had to replace one heating element in my water heater today, it took 2 hours to get the thing to drain, come to find out the pop off valve had closed back up and wasn’t venting. Dunce award for me.
Sometimes you have the world by the butt, and sometimes even when you do, it has diarrhea. :D

I use top round roasts for beef jerky. But your recipe sounds very tasty:drool:, too, David, and sounds like a LOT less work! Thanks for sharing!

My pleasure. My strips are 1 1/2 - 2 inches and cooked either rare or medium to satisfy the crowd. The band of fat and connective membrane pieces also get cooked but shared with the dogs. The little end pieces usually fall to quality control.

David- Your weather system is called a Kona Low or Kona Storm. Not a common Winter event for Hawaii.

I have prepped LB like you, but never froze it prior to use. I like your technique. Like RNG posted- it saves work. I usually marinade beef in a Worcester-Soy Sauce + minced garlic, bay leaf, and other spices. I consider it a brining solution. I brine a lot of meats prior to cooking. Not exactly a good choice, but it definitely juices up drier cuts. I do have to watch the length of time; some meats really suck up the salt solution quickly.

Snow started here before noon. It is still snowing looks like 4" - 5" has fallen so far.

This was an unusual storm, something about 2 lows converging, feeding into each other. Winds were reported to be 191 mph on Mauna Kea. I think we may have been partially sheltered by the mountain as for both wind and rain. Today we saw a bit of cold rain and our high temp for the day only made 70°.

I living on Oahu for the Jan 80 storm and remember it well.

Never been much into brining but have marinated a lot. As most of the meat we buy is somewhat bulk (meaning more than a single meal for immediate use) I’ve come to seasoning and vac sealing before freezing. I sometimes vary the seasonings and have done both wet and dry. Makes it very easy to thaw and cook. Wife made a hoisin based marinate a couple weeks ago. It was way more than needed so I put that on some steaks, vac sealed and froze immediately. Will be interesting to try the final product. Yoshida’s Gourmet is another frequent choice either on NY strip or ribeye.

31 here with freezing drizzle coming down on the 5 or so inches of snow. Drinking 1st coffee waiting for the storm to end and then out to clean the mess up. Will turn on the weather to see what their guess is for the upcoming few days. Not sure if I will use the plow or the bucket. Will have to see how much ice there is. Happy tractoring all!

19 right now...and a steady mix of snow and (maybe) sleet coming down. Just plugged the tractor in, so I'll be heading out in about an hour. There's about 10-12 inches atop the tractor hood, looks like somewhat less on the walks. High about in the mid-30's.

37 outside this AM. Heading to lower 40's. Rain event for us looks over. Fields could use a week without water. At least we escaped the ice and snow so far.
