Don- Thanks for the recipe. My recipe is similar; I really think collards need vinegar or a vinegar based hot sauce. I generally use smoked turkey legs for the smoke flavor instead of smoked pork hocks or fatback.
RonJH- I have not seen Spotted Lanternflies around here yet. Another invasive species to which to look forward.

Horseradish is done. It took some extra time and breaths as the core of what looked to be a really healthy root had a rotten core. I am getting quicker and much less messy prepping this stuff nowadays.
I have this poltergeist inhabiting the house who loves to hide hand tools and small parts. It seems to be more active at night. Stuff is always some place different than where I left it. Maybe it’s Col. John Bryant looking for his hand tied flies.
