That's why there is a serious obesity problem out here! ....But boy, it is good stuff!

Around here at all the Farm Shows, Fairs, and Carnivals some of the venders sell deep fat fried dough loaded with powdered sugar after it's cooked. A guaranteed sugar rush, elevated blood sugars, and bad heartburn. I have not eaten a doughnut nor fried bread in over a decade. I prefer my grease and carbs in other forms. I am considering going to a Processed Junk Meat and Sausage Eaters Anonymous Meeting soon. I am getting those cravings again.

RNG just been listening to them a lot recently glad you enjoy them too. Messina was great on the mandolin

Been listening to Jim Messina since the Buffalo Springfield Days, then on into Poco, then with Kenny Loggins, then out on his own. And I agree, his mandolin playing really sets him apart.

Yeah, a lot of people seem to call that thing a taco, but it's really more of a tostada to my eyes.
I was first thinking tostada also but down here the tostadas are more like a flat corn taco shell, the gorditas are more of a bread.

I am being educated on what tacos, tostadas, and Gorditas really are. :cool: I am still learning about Mexican and SouthWestern foods and cooking. There are couple of decent Mexican restaurants around here that I believe cook authentic dishes (or close). I am still more comfortable ordering tequila than actual Mexican/SW foods. I actually review their menus on the internet and then google the food entrees.

Lately I have been thinking about cheesesteaks. Other than the processed junk meats I do not miss the "less than healthy" foods/food groups.

We love Mexican food. (We love lots of different ethnic foods.) I could probably eat tacos every day and never get tired of them. There are so many delicious things you can shove into a tortilla and eat.

I never had much exposure to Mexican/SouthWestern foods and meal preparation. And the Mexican fast food chains' offerings of years past were generally tasteless/bland pasty stuff which needed a lot of hot sauce. Luckily we now live near a diverse multi-ethnic area with decent restaurants offering "authentic" ethnic/regional foods. With an idea of how a meal should taste from the restaurant entrees I will experiment with the right ingredients until I get it right. I no longer consider Mexican food bland.;) :cool::)

My tree trimming was over before it started today. The early 5-7 mph winds, turned into 15+ mph with gusts well over 20 mph.

Sun is still out though. Maybe winds and sunshine will help in drying this place out a bit.

All this interesting talk about food and diet, and the appetizing pics to boot.

Wife and I realize our eating has become healthier over the last few years. While I’m not about to become a true Don convert, I will admit to his educational influence. I’ve always been a more varied, exploratory fan of vegetables than my wife resulting in some compromises. We do eat less red meat than we used to, nor do we eat as much or as often.
In addition to genetics and diet as discussed I think a very important change not getting enough exposure is lifestyle habits, basically when we eat, how we eat.
Most any day there are internet articles extolling intermittent fasting. Looking back, guess I could say I grew up that way. Sure we usually ate 3 meals a day, if willing to concede that a bowl of cereal or a P&J or two were considered a meal and a sit down supper that was almost always meat, potato, veggie based. BUT, we almost never had a snack after dinner except maybe a glass of milk or something. Snacks between meals? Piece of fruit maybe. Milk and cookie had Mom baked something, but definitely not everyday, just something special. I can look back and see how these changed as I was in HS, even moreso as I grew up. Even my early years in the Army, 3 squares a day, but still rare to snack much. So I have to admit that today, my challenge is less what I do eat (meals) but more the grazing habit I’ve picked up over the years, that snack at 8pm, munchies as I watch TV. I’m also guilty of being more sedentary at my age than I used to be.

Bottom line, I like learning what Don shares and equally appreciate Bird’s view for himself as it is similar to my own and to be honest should I have a soul searching event in the future most likely my decision will be less on longevity more on quality and enjoyment of time left.
Sadly the previously noted passing of my BIL, wife and I pretty much agree that given his diabetes and other issues, his approach seemed more along the lines of ignoring what he knew and just complain more.

Taking advantage of a break in the weather I scrubbed my roof metal with a 20inch buffer with green scotchpad.
This is the underside, likely just a primer coat as this was intended as flashing material. Thinking I will roll a coat of white on it before installing.

Another bit to your education. You can have a heart healthy tasty burrito. Ours are made with toasted pumpkin seeds, black beans, steamed kale and spices rolled up in a Ezekiel 4:9 sprouted grain tortilla topped with chipotle Cholula sauce. :licking:

45 degrees, which may seem warm to many of you right now but I got seriously chilled putting up row covers this morning.
Then it was on to cutting up potatoes, today was Kennebec. Nice and warm in the garden shed.
Temps are falling and it's the big chill for next couple of days here.

Rick- I agree. The best way to learn about a region's culture and foods is to be there and interact and eat the local foods with the "locals." The SouthWest is on our bucket (food trough) list.;):cool:

Wifey and I are in a similar situation. Our focus is on reducing the inflammatory foods. A plant based diet is one of the best ways to reduce consumption of inflammatory foods.

Don- I appreciate your willingness to share information that most of us really do not want to read nor think about but should. We eat a lot of dried bean dishes usually with a meat protein/fat ingredient and we eat Ezekiel 4:9 food products. I really like their cereal. I have found a lot of ways to reduce the "bad stuff" with the addition of "good stuff" ingredients. You do make me think.

We spent several years traveling the southwest. Some really good food to. Some of the best meals were while visiting Don.

Cleaned up the trees that fell last week, used the little tractor with a blade for most of it, pushed it into the woods. Then I dressed the end of the driveway where everyone that can’t read the sign to the FedEx air terminal, turns around, usually way too fast and wheels turned full over.
