dealer said my drive chains are stretched, and they need replacing soon. wouldn't you know it, 1 day after getting it back the chains come off, and they sag badly.

did the dealer do something to my Gator. how hard is it to fix, whats needed etc???

The new chains will stretch. Jack up the rear end and remove the rear wheels. Loosen the bolts holding the hubs onto the frame. There should be a take-up bolt on each side at the rear of the hub. Tighten each side equally but the chains should still have a slight sag. You might have to do this a few times before the chains get the intial stretch out of them. Use an aerosol chain lube that will be dry on the chain.

Keep an eye on your sprockets also. If you run the life out of the chain you end up wearing the sprocket beyond the service life.
