So I've got a Ford 3600 that needs a new clutch.

Symptoms:
Will start in neutral.
Gears will grind when trying to put it into gear or engage the PTO.
Clutch linkage cannot be shortened any more.
I am able to put it into/take out of gear if I bend clutch linkage to shorten the overall length, so I know its not stuck.

With that being said, I've noticed there are quite a few different dual stage clutches available from the usual suspects, all slightly different.

Attached is my identification plate, but I'll transcribe it here as well:

Hyd. Lift: 6H31B

From a different forum, I've been given the decoded model/unit information: CA213C

CA2 = 3600 1976-1981
1 = Diesel
3 = Live 540 rpm
C = 8x2 speed manual (4x1 + hi/low)

Unit = Built November 30, 1976 second shift

If anyone can provide any additional information about this new-to-me tractor, I'd be very appreciative.

I don't know about that tractor but, if it has an inspection cover you may be able to adjust the release fingers and get a couple more yrs out of it. I did this on a 445 long I owned. When it finally started slipping I sold it and told the buyer it needed a clutch.
If I were in your shoes and going to replace it myself I'd split it first and make sure I got the correct clutch. Especially if you're going to order it online.
