I too live in Texas and had to build some fence this summer. Chiggers, ticks, sun and a lot of sweat.
I use 2 7/8 steel pipe on the corners. When I checked the price there wasn't a whole lot of difference between steel and wood. The wood posts looked like ****, so I went with steel. I only want to do fencing once and the steel will last many years.
I use t posts spaced 7 feet apart with smooth wire for my horses. I have one horse who always likes the grass on the other side of the fence. I put line posts in every 100 feet as well. Haven't had any problems with horses into fence wire or getting out even when the flies are driving them crazy.
One suggestion make sure you cross fence so there are two fences between you horses and any roadways. If they get through one they tend not to get through the second before you find them and get them back in. An old horse breeder taught me this one and it's become my mantra.
