OK so I have searched and seen some pretty cool homemade PTO winches. My question is, when making it, how do you address stopping it when the pull is complete? When the PTO is engaged it will start the pull so I am guessing that you just have to disengage the PTO when you want it to stop. Also what about a load holding brake?
On the tractor that I am using it's hydrostatic drive if that matters.

If I may suggest, You will be well advised by going to the logging winch manufacturers web sites and take a look through the illustrated parts diagrams of various models and types.

The drive is always "clutched", and the holding brake is often a ratchet, sometimes a brake band.

Take a look, To do as much helped my visualization a lot.

A good old "worm" drive pto winch will hold on it's own by means of it's very high gear ratio. This also means they are verrryy sloooow!

thanks guys, I will start looking at more factory stuff and see if I can come up with something that will work.

Those winches are so simple designed that it should be quite easy to copy. Most other winches are so slow that they are almost useless.
