Bolts into the bucket would be good and I would probbaly see if you can get a piece of flat plate to enclose the top of the forks, otherwise you will chew up those plastic bins sitting in the background and it will be likley to twist, then bend with a heavy load.
I am not sure I would trust channel like that for a full 20 bushel bin of apples, but based on your loader (LA304), you aren't going to be able to lift more than 500-700# anyway, so you should be able to get away with it.
You will need to reinforce the top lip of your bucket, or you will bend it up though.
