I would ask that question to a local agronomist as sesame is rarely grown here in the United States and apparently is a difficult crop to harvest mechanically. The little information I could find (such as a Texas A&M report) suggested a regular grain head such as we would use for wheat or soybeans, but only if shatterless varieties are grown and they had some very specific recommendations on separator speed and concave gaps. I personally would not be willing to spend the hundred grand or so that a header for that combine unless I had somebody who really knew what they were doing give some specifics.
