I power wash the old grease off and the zerk fitting. Then grease until just a small amount of grease comes out. Usually a little water comes out first. I do not like a lot of grease around the joint because it attracts dirt.

I use Scotts blue shop towels buy them by the case and I only add grease till I see cleaner grease coming out edges then wipe off old crud, I also wear rubber gloves so hands don't get too greasy. zerks get wiped before and after.
too much grease will hold dirt and cause wear on moving parts

Is it safe to pressure wash around bushings, etc? Couldn't the pressure force water through the seals and do damage. I have been avoiding using my pressure washer on the advice of my dealer.

I have been meaning to buy one of the Univer-co lock on grease couplers that are made in Canada. They are a bit more expensive than the locknlube ($32) but they are the same size as a regular coupler. I have a couple spots on my backhoe that I can barely get a regular coupler into. I think I could save the price in just grease cost. I see Rural King has them if you guys have one of those nearby.
