One possibility would be to add a hand lever to the clutch pedal.
I have heard of this being done, I haven't seen once other then on some of the older tractors.
I saw one on a car over 50 years ago. As I remember it was basically a lever hinged to the steering column and attached by a connecting rod to depress the clutch pedal. There was probably a mechanism to adjust the length of the connecting rod and a hinged connection or two between the clutch pedal an the hand lever.
Because the driver would have had trouble holding the steering wheel and working both the clutch and gear shift, I doubt it would be legal today and don't know that it was legal back then.
The driver was a fill in preacher at our church.
