I have a large inverter on my houseboat. I have run (Twin) double 00 cable to the battery box. in the box i want to put a fuse block however the fuse block i have will only take one cable would it be acceptable to reduce back to one cable before going into and out of the fuse block.

The fuse i have is very similar to that one .

My inverter required 0000 cable which i was unable to get so as ran TWO 00 cables to get cable capacity. However my fuse will not accommodate two cables so i wondered if I could reduce back to a single cable for about 2 inches either side going in and out of the fuse

Reducing from two 00 to one will make the single 00 cable the smallest point in your wiring. You will not be able to draw enough current through a single 00. Other than cost. Why not use 2 fuse holders. One on each 00 line. Each holder would have a fuse 1/2 total amperage.
What size inverter do you have? My 5000 watt inverter has 00 for a 10' run.

Ron H. is right, you need 2 fuse blocks.

If you use 2 fuse blocks be sure you use fuses rated for 1/2 the amperage load.

I think they are giving you some good advice on using 2 fuse blocks.
