Are you going to install the insulation yourself? Cutting and fitting it into those cavities is not going to be fun.
Not sure. I've been deciding as I go along what tasks I do myself. I've done insulation before so can do it, but just like drywall I hate doing it so hopefully can find someone to get it done in the timeframe I need.

If it’s not too late I would dig a small footing on the perimeter to allow for a thicker edge with a couple bars of # 4 in it. It serves two purposes. First it keeps the material under the slab from migrating out leaving a void and the increased strength is needed on the edge since tires put 100% of their weight there until they get further out to gain a larger support area.
I have been doing it for over 50 years since I started. Learned the hard way. I have poured over 450 yards on my home project around here and did my last about 6 months ago when the price reached $200 per yard. Thanks to CA politicians and their environmentalists

You might also think about some decorative work outside. I stained my porch to go with my stone work and I have more to do.

The way I see it is if you’re knowledgeable and willing to work that’s the way to go. I have built 5 new houses for ourselves two without subs and three with Sheetrock subs, mainly because the ceiling was 18’ 6”. Sometimes it takes years but I don’t like their work quality (usually) and no house payments. One of my houses was a floating model.

Took a week off work to put up more framing:

Still have to frame all the closets and all door rough openings, as well as the kitchen island for the range-oven.

It goes real slow when working alone, plus with the vaulted ceiling have to measure & cut every board individually.

This Tool really helped with accurately measuring all the framing members.

Is that plastic under the stair steps? What does it do?

So it's temporary?
