Ours always came out tender when we roasted in the bag with vegetables. More dark meat than domestic, but otherwise the same.I do to but like I said tougher than shoe leather, at least up here.

That’s a good idea too. I think using the roasting bags like we do holds moisture and does the same thing as brazing.We love the wild turkey here also .... simply brazing them until they fall off the bones works every time. If it's tough, it's not the bird, it's the cook's fault. No such thing as a tough bird.
