I do to but like I said tougher than shoe leather, at least up here.
Ours always came out tender when we roasted in the bag with vegetables. More dark meat than domestic, but otherwise the same.

I hear both of these constantly and have to believe that it's how they are compared. The only time I've ever really wanted to shoot one is when there are 40 of the little :censored: out in my garden. I've restrained myself so far, I'm not sure if it's the $500 fine or jail time which is a deterrent. ;)

We love the wild turkey here also .... simply brazing them until they fall off the bones works every time. If it's tough, it's not the bird, it's the cook's fault. No such thing as a tough bird.

That’s a good idea too. I think using the roasting bags like we do holds moisture and does the same thing as brazing.
