I’m in central Virginia, on a partially wooded lot - trees border me on three sides. The lawn is looking good after years of work but weeds make the perimeter look terrible. I’d like to clear them out, or let them die off this winter as they always do, and plant ground cover that will fill in at least a few feet to improve the aesthetics. I have zero experience with plants lol. I was looking at Halcyon ‘Hosta’ because Google said to :) I’m open to ideas, combinations, etc. but it has to be ultra low maintenance. Thank you.

Look at 'ardesia' and 'asian jasmine'. One other that comes to mind is 'cast iron plant'. I'm not sure if any of these will survive your winter, but all 3 are good shade tolerant plants that do well in the deep south.

"The deer will love you... and eat all the hosta plants"

Yup we found that out hard way.

I second the Asian Jasmine. It makes for pretty ground cover, especially if you get a variety that flowers. It looks like it might work in your location, which shows to be USDA Zone 7A. It will take over an area and choke out most weeds. Put in a border where you want to contain it so you have a clear line to cut it back. Otherwise it will take over the whole yard.

"Asiatic jasmine is a tropical plant that thrives in humid conditions and does not like extreme heat or dry desert heat. It is not winter-hardy below USDA zone 7 although it is cold tolerant and remains green even after a hard freeze, which is why it is valued as a turfgrass alternative in warm climates."

Deer? What's a deer? We have so many I have to chase them out of the refrigerator lol. Didn't think of that... good catch.

How will the jasmine do with leaves falling on it in the fall? Or better asked... is it hard to clean up leaves that fall on top of it like some of my shrubs that hang on to them with a death grip?
