I only have 6010 and 7018 in my shop (DC only) but if I had AC it would be 6011 and 7018. 60xx rods for any first pass on anything with a gap then 7018 to fill and cap. 7018 doesnt weld well over a gap so just zip in a quick pass of 60xx rod to bridge the gap then go for the Low Hydrogen. I kept my 7018 in a sealed with tape box for about a year prior to getting my Phoenix rod oven and they still welded OK. I would just stick them (ground)for a 3-4 seconds till you see the steam puff out to dry them out prior to welding.
As already stated, the only drawback to 7018 is the restart issue, but with several hard taps, they arc back up but on rare occassions the do stick and you have to snatch them out of the rod holder, let them cool and then break them off and start over
