Drilled and slotted rotors run cooler compared to solid rotors because of air flow. Has nothing to do with plain rotors being a "heat sink" or thermal mass. LOL.

I've run drilled and slotted rotors on everything I own and never had any kind of problem with them and I feel like I get increased performance.

Yes, although it's for cars there are still facts that are applicable to trucks.

I run stock rotors (Zimmerman) and Akebono ceramic pads on my TDIs. I've never encountered an issue of brake fade: if I were to go to the track, then, yes, I'd likely get brake fade.

Best is to make sure you have good, clean mating surfaces (pad-to-rotor as well as pad to caliper) and properly greased caliper pins (and that the pins are not pitted).

The engineers who designed the braking system know what they're doing. Some slight improvements can be had with newer materials, but in general (and as noted in the above linked article) what might appear to be better aftermarket stuff isn't necessarily better than stock.

Sometimes rotors' can be thermally damaged and that damage cannot be seen: I've actually pulled off rotors that had metal "delaminating!" Some warping may occur after which turning/truing them the issue returns: been there, done that! For me and my cars the cost of new rotors is negligible: for these and other like-trucks the expense is more of a factor; my truck doesn't see enough mileage that I have to be concerned with replacing the brakes on it for probably the rest of my life.
