Randy, One of the cardiologist in the heart study I'm in in Houston explains how so many of his fist time patients used the same words you used about not having a problem with cholesterol. The blood is tested for Cholesterol levels at FASTING. He explained and had charts of the time frame that it take dietary cholesterol to get out of the blood stream and your blood clears up. It takes about 4-5 hours. So if you eat a meal with cholesterol and 4-5 hours later have another and the another you are keeping your blood loaded with cholesterol. However when you take a blood test after 8-12 hours of fasting the cholesterol level is back down. Go eat a bacon hamburger and test your blood. That's the level your arteries are exposed to daily.

In diabetes II, saturated fat clogs the insulin receptors so insulin stays in the blood stream and sugar can't enter the cells. Therefore, the best blood test for diabetes is the insulin test not the blood sugar test.
