I asked the "talking head" at that barbecue joint if the ribs were parboiled

He said absolutely "NO."............ Trust me they were parboiled. How can anyone ruin a good rack of ribs with parboiling them before smoking them is beyond me. Maybe some of the participants here can set me straight with parboiling, but why drain a tasty, greasy piece of meat of flavors by boiling it before cooking it. The brisket seemed boiled too :eek"


No real crust and absolutely no smoke rind band.


This seems to be a NE thing....... wrong..... wrong. In defense of NE barbecue joints the iced tea can come unsweetened. The last time I had Southern iced tea I almost got out of the truck to run beside it.
