Try this one on for size you might like it:

Beef Jerky
Marinade

4 T. soy sauce

4 T. Worcestershire sauce

1 T. ketchup

1/4 t. pepper

1/4 t. garlic powder

1/4 t. onion salt

1/2 t. salt

1 pound lean round steak, cut 3/8-inch to 1/4-inch thick
Combine soy sauce, Worcestershire sauce, ketchup, pepper, garlic powder, onion salt and salt in a large bowl, stir until dissolved.

Add round steak. Marinate for one to two hours and then dry in a convection oven for at least 3 hours, depending on thickness. Keep the door of the oven slightly open. A dehydrator can also be used.

You guys got me thinking of the good old days before my divorce when I lived in a house with an oven and I could make my own jerky.

Now I live in a barn with a microwave. /forums/images/graemlins/grin.gif

Anyway, how about some input on a good dehidrator. Where you bought it and what to look for.

I really want to try out the recipes I've just read!!!!!

O.K. I just got an e-mail from my son in response to my question about the beef jerky.

The brand of jerky is Pawnee Bill's . He gets it from the Blue Mountain Candle Company in Northampton, PA.

However, I couldn't find any information about the beef jerky on their website. I DID find more information about scented candles than I ever wanted to know! /forums/images/graemlins/crazy.gif

I did a quick Google search, and found Corinne's Country Crafts that sells it. The store is located in Stormville, New York. Don't know how close it might be to you. There were a bunch of sites that listed Pawnee Bill's beef jerky as well, so maybe you could find something even closer.

Thanks Gary, I did some checking and looks like the Pawnee Bill's goes for about $26.95 per 15oz pkg retail. Wasn't able to find a link to buy direct from manufacturer at bulk discount rates.

Now I did spend a bit of time last night searching and found several sources, however, none offered any truely significant discounts for large bulk purchase... except a place called World Kitchens: http://www.worldkitchens.net/

These guys are easily the least expensive I found for bulk, and claim their 'Old Fashioned' style is the leading seller in the North West. They have 1lb pkgs as low as $8.49/lb delivered. I ordered a 12lb variety case for $8.99/lb delivered. I'll let you know how it goes. Seeing that you end up with about 1/2 the starting weight in homemade jerky, at least it's in the realm of reasonable, cost wise. Those 4oz retail pkgs would bankrupt a guy. By the way, I found them thru a link at http://www.anysoldier.com/WhatToSend.html.

Eddie - I have a NESCO Snackmaster® Pro Food Dehydrator that works well. Adjustable temp settings and you can add trays for more capacity if you want. http://www.nesco.com/products/product.phtml.

I have also used with good results High Mountain Jerky Cure and Seasoning from http://www.himtnjerky.com.

Thanks guys for the input, I'm still going to dig out the dehydrator and jerky board to try the recipes above. Speaking of which...

My dehydrator is a Nesco, too, though I don't recall the model name and it doesn't say on the thing. I do remember that I got it at Wally World and it was in the $40 range. I think. At $8.99/lb I've made a few hudred dollars of jerky.

None of the jerky I've made has been inedible, though there was one batch that rivaled the saltiest country ham I've ever had. I pretty much ate that one myself, and in small bites. One nip satisfied my salt requirements for a whole day. I made one batch too sweet, too, but the kids loved that one anyway. I got a Black & Decker vacuum bagger for Christmas, so I'm gonna vacuum bag some of each batch from now on. It keeps real well that way....I think. It's never actually been in the bag more than a couple of weeks so far. /forums/images/graemlins/crazy.gif

My wife makes the best Jerkey in the world and here is a tip. I use to get a brisket and slice it with my electric slicer but no more. There is a German dish called Rouladen and it is made with slices of beef about 1/8 in thick. That is perfect for jerkey and you can buy it at just about any meat market already sliced. Then you just cut the sliced meat into 1" strips.

Hmm, I was just going to ask the butcher to slice some top round or brisket, etc., but it'd be nice if it's already there. Say Ozarker, if your wife wouldn't mind... what's her recipe for "the best Jerky in the world"?? I dug out the dehydrator and am going to do a batch soon.

For those homemade Jerks, anybody using jerky cure?
