They did not compare meat and they did not compare it to a crock pot. But the longer you cook beans and vegetables the more nutrients are cooked out. I'm betting a crock pot would be the least nutritious.

I'd figure when you cook something in a crock pot, everything stays in the pot. You tend to eat all the juices in crock pot food, therefore, you eat all the nutrients even if they are cooked out of the original carrier, like a carrot. You're eating the carrot water. Make sense?
Makes sense to me. My soups and stews are good 'til the last drop!

It is suggested that you trap the steam when cooking in a crock pot, hmm that sounds like pressure cooking.
The best way to make sure no nutrients escape from your vegetables in the slow cooker is to trap the steam. When you place the water or broth into the cooker with your vegetables, double check to make sure the lid fits the pot as tightly as possible. Check to make sure there are no cracks or openings through which steam might escape, and resist the temptation to remove the lid during the cooking process. As your vegetables cook, any leaked vitamins will be preserved in the broth rather than evaporating.

And soups and stews are the main things people use crock pots for. Everything is consumed to the last drop. :licking:

The way I look at it, it does not have to be one or the other. Both are good and many use both as I do. Either way, home cooking is the BEST. In the days of COVID, while I miss my favorite restaurants, my cooking has improved by necessity and I do not think we will be going out to eat as much as we did before. Not that it was all that often before.
