ways to make cutting discs vertically adjustable

Hello everyone. I've made an undercutter implement that would need some cutting discs so that the weeds don't jam it. I was thinking of different mechanisms and decided to go with the one in the first picture.

The top plate shown to the right is bolted on the holder tightly. I think this would work, but I wanted to discuss some other mechanisms. I found a grimme potato harvester that uses just 2 bolts. I am not entirely sure how it works, but I think it has a nut on the inside too. You first tighten the bolt and then the nut, maybe in the other direction. If you have a similar design at home, I'd love to see images of how it is constructed.

Not familiar with an undercutter. Is it for peeling up sod?

I'm thinking about old cultivators that had a socket and wedge type vertical adjustment I believe it only took a hammer to adjust it.
Too busy right now for a search and picture. I'm sure someone else might know, I'll check back later.
